Peanut Pudding

Pudding made from walnut kernels, eggs, cinnamon , vanilla and icing sugar.

Procedure:
1. Beat the nut kernels (leave a few for decoration) finely and mix with ground cinnamon and vanilla sugar
2. Beat the egg yolks and sugar to a light foam and alternately stir in the stiff egg white snow and ground kernels
3. Place the batter in a buttered pudding tin (fill only three-quarters full, as the pudding will increase in volume as it cooks), cover with buttered parchment paper, cover with a lid, place in a saucepan of hot water and cook under the lid for about 1 hour
4. Let the cooked pudding cool a little in the tin, then tip it out and leave it in the fridge to set
5. Decorate with whipped cream and walnut kernels.
