1 pk onion 1 butter 500 g peas 750 ml vegetable or chicken broth 1 cup whipping cream to taste salt, ground black pepper 1 pinch ground nutmeg

1. Fry the finely chopped onion in the hot butter. When it is glassy, add the peas, pour in the stock and bring the soup to the boil. Cook for about 10 minutes, or until the peas are soft. 2. Blend the cooked soup with a stick blender and add the cream. You can leave the soup like this or strain it through a sieve. Let it go through the boil, season with salt, pepper and nutmeg.
