Pea fritters with cheese

Fried peas made from boiled peas, egg, grated cheese and other ingredients, fried until golden brown.

Ingredients:

350 g of yellow peas 100 g of small tomatoes 100 g of arugula 60 g grated cheese 20 g breadcrumbs 2 pcs garlic cloves 1 pc of eggplant 1 pc parsley sprouts vegetable oil ground peppercorns water salt

Procedure:

1. 1. Drain the cooked peas, season with salt to taste, brush with a little oil and let cool
3. Then stir in the beaten egg, finely chopped parsley, finely grated cheese, peeled, crushed garlic cloves, season with salt, ground pepper and thicken with breadcrumbs if necessary
4. Make a dough, from which form smaller balls, fry in heated oil on all sides until golden brown and drain on a paper towel
5. Serve garnished with tomatoes and rocket.

Recommendation:

Sliced ham or smoked meat can be added to the dough.
