Pavlova minitortičky
ingredients
4 pcs egg whites 240 g granulated sugar 1 tsp 8% vinegar 1 tsp cornstarch
Cream:
1 cup Mascarpone 1 cup whipped cream 125 g fruit to taste ( raspberries, currants, strawberries…) 50 g sugar

I had egg whites left. I tried Paul’s cakes.

Add a pinch of salt to the egg whites. Whisk slowly at first. Then add the sugar a little at a time and beat at higher speed. Add the cornstarch and vinegar to the stiffly beaten egg whites, mix well. The batter is ready.

Preheat oven to 110deg.C.

Prepare a baking tray. Place the baking paper on it.

Place the dough in a piping bag with a tip. On the paper, make the cakes by first making the bottom of the cake and then spray the edge of the cake that is higher than the center of the cake. Bake for about 1½ hours depending on the oven. Leave to cool – you can also leave them in the oven.

Make the cream by whipping the whipping cream with the sugar and progressively mixing it with the mascarpone.

When the mini meringues have cooled, spread a little cream, add the FRUIT and cream again.
