Patties with roasted salmon cream and mascarpone

A festive treat in the form of puff pastry cupcakes filled with roasted salmon and mascarpone cream, flavoured with lemon juice and white pepper.
Ingredients:

1. Cut out 5 cm diameter rounds from a portion of the puff pastry
2. For each round we need one more, from which we cut out the centre
3. Place the full rounds on baking paper, brush them with beaten egg and place the round with the cut-out centre on top
4. Bake in a preheated oven at 200 °C until pink
5. When cool, fill them with cream: bone the salmon meat and remove the skin
6. Chop and add mascarpone, white pepper, lemon juice and salt
7. After cooling, fill the baked patties with the cream
8. Decorate with sprigs of dill, a thin slice of lemon, caviar, cranberries…
Recommendation:
If desired, you can thin the cream with a little cream.
