Pâstičky with meat and kidneys

Pasties (i.e. savoury dough) filled with kidneys and roast meat.
Ingredients:
Procedure:
1. Sift the plain flour and salt into a bowl, add the finely chopped fat and mix with your fingertips
2. Add a little water to the mixture and work into a medium stiff dough
3. In the meantime, prepare the filling by cutting the de-blanched roast beef and kidneys, potatoes (or other ingredients) into cubes with an edge of about 1 cm, salt, pepper and mix
5. After half an hour, divide the dough into 4 parts, roll out into rounds, cover with filling, brush the edges with cold water, fold the rounds in half and press the edges well together
6. Brush the patties with beaten egg and bake for a quarter of an hour in a very hot oven, then finish baking in a moderately heated oven (about 40 minutes).
