1 Firstly, cut the chicken into small pieces (small cubes) and put it in a bowl with the soy sauce so that the meat is coated on all sides. This way it allows me to marinate while I prepare the other ingredients.

2 Finely chop the red pepper, leek, mushrooms and garlic. Grate the carrots coarsely and slice the onions. In a bowl, whisk the egg with a pinch of salt. 3 Boil the pasta. Cook for 15 minutes.

4 Add the chicken and soy sauce to the hot oil. Fry the meat on all sides. If you cut the meat into small cubes, it will cook quickly. No need to add salt and pepper, the soy sauce will take care of everything. Once the meat is browned, remove it from the pan so that the oil stays in the pan and put the meat aside for the time being. 5 Heat the remaining oil and soy sauce again and add the onions and garlic first, then the carrots, then the peppers, leeks and mushrooms. When everything is cooked and the mushrooms have softened, add the eggs from the bowl. When the eggs are no longer green , return the meat to the vegetable mixture and add the Hoisin sauce to taste. Approximately 100 g should be enough for the quantity indicated. Stir well afterwards, adding more Hoisin sauce if necessary.
