Pasta with garlic pesto, cashews and peppers

ingredients

400 g penne pasta 300 g red sweet peppers 1 handful parsley 75 g unsalted cashews 2 cloves garlic 2 tbsp olive oil

First, put the peppers in the oven to grill for 30 minutes. Then let them cool a little and scoop out the flesh.

Place the cashews, garlic, peppers, parsley and oil in a blender and blend well.

In the meantime, boil the pasta in salted water until tender.

Then fry the pasta in a pan and add the blended mixture. Stir and serve.
