Parisian pea soup

2 tbsp butter 2 pcs shallots 1 cup shelled peas 2 pcs lettuce 5 cups vegetable broth 1 pinch ground nutmeg 1 pinch salt 1 pinch ground black pepper 2 tbsp low-fat cream

1. In a deep, heavy-bottomed pan, melt the butter, add the chopped shallots and sauté over medium heat for about 5 minutes, until the onions are soft. Stir occasionally. 2. Add peas, lettuce pieces, broth and season with nutmeg, salt and pepper. Bring to a boil, then reduce the heat, cover and cook slowly for 10-15 minutes until the peas are tender. 3. Set the pan aside and let the peas cool, then blend, pour back into the pan and reheat. Pour the soup into four preheated bowls, spoon a dollop of sour cream into the centre and garnish with the parsley.
