Paratha bread

Paratha is an Indian bread often eaten at breakfast. In this recipe, paratha is filled with spices and cheese. It can be baked raw and easily taken to the pan when needed.

Ingredients for four

Paratha dough 3 dl coarse or semi-coarse wheat flour and 1 dl semolina.1 teaspoon of caraway seeds (if desired) Paratha tea 2 dl paneer cheese (market home cheese is good for me) 1 handful fresh coriander 1-2 fresh chilliesTip: Paratha can be topped with spinach, potatoes, onions, tomatoes, boiled eggs and various spices. Stir in the paratha batter. Add water slowly and knead thoroughly to a medium-hard dough. Moisten with water and place under a cloth to rise for about 30 minutes. Divide the dough into four parts. Add flour for rolling. Roll out each piece into a half-inch thick log. Chop the kernels and add a handful to the centre of the dough sheet. Lift the edges of the dough up into a vertical dumplings and roll out again until smooth. Now you have the kernels and the centre of the paratha. Fry the parathas in a hot pan for a few minutes on each side until bubbling brown and serve immediately.
