Paprika pie

The sweetest peppers of the season make a delicious pepper pie. It’s a simple but delicious vegetarian dish that goes well with a fresh green salad.

Ingredients for four

2 different types of pasta, with a choice of 2 or 3 spices; 1 onion 2 dl cream 1 tbsp potato flour 200 g grated cheese 1 tsp black pepper 1 tsp salt 1 tsp oregano 1 tbsp olive oil Salted pie crust

Wash the peppers thoroughly. Slice and dice them. Peel and finely chop the onion.

Soak the olive oil in a pan. Add the diced peppers and onion cubes to the pan and cook over a low heat until the water has evaporated from the peppers and onion and they become sweet.

In a mixing bowl, add a splash of cream and the potato flour. Mix until smooth. Add the remaining cream and grated cheese. Season the cream mixture with pepper, salt and oregano.

Stir the diced peppers from the pan into the cream mixture.

Shape the pie crust to fit the baking dish. Pour the paprika mixture over the pie crust. Smooth well and bake the pepper pie in a 175 C oven, for about 40 minutes.

After baking, allow to cool and firm up for half an hour or so.
