Procedure:
1. Grind day-old white bread without crust coarsely
2. Heat the oil in a deeper pan, sauté the sliced garlic and the fresh thyme
3. Finally, add the breadcrumbs and fry for about 2 minutes, until the breadcrumbs are golden
4. Season the mixture with salt and pepper and preferably with a shallow spoon with holes, transfer it to a napkin to drain the oil from the mass.
Recommendation:
Pagritata is used, for example, to sprinkle over pasta, to which it adds flavour and crunch.
Note:
Fresh breadcrumbs are best made from white or toasted bread, with the crusts removed.
