Paneer Jalfrezi

Vegetarian curry with Indian cheese, tomatoes and peppers.

Ingredients:

250 g diced paneer cheese 3 pcs small onions sliced thinly 3 pcs tomatoes cut into eighths or strips 1 pcs red or yellow peppers, seedless, cut into strips about 5 mm thick 1 pc green peppers, seedless, cut into strips about 5 mm thick 1 pc fresh green chillies, chopped with or without seeds 1 pc piece of fresh ginger (5 cm) finely crushed 1 piece dried chillies whole, with seeds 3 tbsp vegetable oil 1.5 tsp ground chilli powder 1.5 tsp of cumin 1 tsp wine vinegar 1 tsp salt 3/4 tsp garam masala spice 0.5 tsp dry roasted cumin seeds, ground 0.5 tsp ground turmeric

Procedure:

1. In slightly heated oil, fry cumin seeds, dried chillies and about 2/
3 grated ginger, fry for 30 seconds
2. Add the onion and green chilli, turn up the heat source and fry for 5-6 minutes until the onions turn brown and slightly brown, add the peppers, salt, turmeric and chilli, fry for another 3 to 4 minutes
3. Reduce the heat under the pan again, add the paneer cubes, gently stir everything, fry for another 5 minutes, then add the tomatoes and heat through well
4. Drizzle the dish with vinegar, season with ground Roman cumin, garam masala spice and the remaining grated ginger, stir and then serve immediately.
