From the yeast, a little flour, sugar and lukewarm milk, prepare a sourdough starter which you leave to rise. Add to the flour, sugar, a little salt, grated zest, ground mace, the risen leaven, lukewarm milk, egg yolks and butter.

Knead the dough well and let it rise. Grease a pancake tin with fat, spoon the risen dough into it and fry on both sides. Brush the warm pancakes with jam, sprinkle with grated cottage cheese and top with sour cream.
