Pancakes with Popenco

Salted pancakes with a relatively little used, but delicious tasting herb – popenc. Served with sour cream and spinach, or with sterilised beetroot.

Ingredients:

1 cup chopped peppercorn leaves 4 pieces of egg smooth flour oil salt

Procedure:

1. Beat the milk, plain flour, eggs and a pinch of salt with a fork to make a smooth pancake batter
2. Add the chopped peppermint leaves to the batter and mix together
3. Grease the pancake pan with oil, pour in the batter and fry on both sides
