Pancakes with Balkan cheese and baby spinach

Cesto:
200 g plain flour 2 pcs egg 1 pinch salt 200 ml mineral water 250 ml milk 1 pcs boiled potato
Filling:
100 g Balkan cheese 2 handfuls baby spinach 2 tbsp sour cream 1 pinch ground black pepper

1. Peel and grate the cooked potato on a fine grater. Beat the eggs, add the flour, potato, salt, milk and mineral water. Knead into a smooth dough and let stand for 20 minutes. 2. Mix the Balkan cheese with the sour cream and season with ground black pepper. Let the spinach wilt in the pan for a while and add it to the cheese. 3. Make golden pancakes from the batter, fill with the cheese-spinach filling, roll up and serve.
