Pancakes from leftover boiled potatoes

500 g potatoes 100 g plain flour 2 slices butter parsley salt black pepper 5 pcs egg oil smoked salmon lemon

Sometimes we happen to raise boiled potatoes from lunch. Sometimes we make a peasant omelette out of them, but now we’ve made a more luxurious version of the English pancakes they serve for breakfast, for example.

Smash the boiled potatoes into a thick mash.

Add butter to them. If they are not already warm because they have risen since lunch, for example, melt the butter so add to the pot.

Now add the flour, spinach, salt, pepper and mix everything together well.

Take a bite out of the mixture and taste it. You need more salt in the pancakes as the flour mutes the seasoning a bit.

Put the oil in a frying pan and heat it up. Shape the dough into small, not very thick pancakes and fry them on both sides.

Break the eggs in a large bowl, add salt to them. Heat the oil in a frying pan, pour in the eggs and make the scrambled eggs.

Place the pancakes on a plate. Place a piece of the scrambled eggs on top and garnish with smoked salmon. You can also use smoked or cured ham instead. Drizzle the top with lemon juice.
