Pancakes a la Rous

Pancakes filled with strawberry cream and honey.
Ingredients:
Procedure:
1. Mix the semi-coarse flour with the egg yolks and lightly stir in the stiff snow beaten with the egg whites, a pinch of salt and 4 tablespoons of cold water
2. Take the resulting batter in batches, place it on a pan with melted butter and fry golden, fluffy pancakes on both sides
3. Beat the cream until stiff, mix with white yoghurt, mashed strawberries, semolina sugar and put the prepared strawberry cream in the middle of each pancake, drizzle with honey, fold and serve immediately.
