Palermo pasta
Palermo pasta is a school lunch favourite. It’s a quick and easy dish to make; just pile up the ingredients and pop it in the oven.
Ingredients for four
300g chicken fillets; 1 tablespoon of cooking oil; 300g pasta (penne or macaroni and cheese);150g grated cheese 1 tsp black pepper 1 tbsp butter 1 tbsp wheat flour 7 dl water 2 dl cream 1 tsp curry 1 tbsp honey 1 tsp salt Thyme for garnish Bring just under a litre of water to the boil. Cut the chicken into strips and fry in a pan until the surfaces stick. Transfer the broilers to a shallow 1.5 l baking dish, in which you should mix the pasta (you can cook it). Put the butter in the same pan, and when it melts add the wheat flour. Mix well. Pour the cream into the pan and bring to the boil until smooth. Season with curry powder, honey and black pepper. Transfer the mixture to the chicken in the baking dish. Stir in the cheese. Pour the boiled water into the casserole so that the pasta is covered. Bake the palermo pasta in a 175C oven for 30-40 minutes. The pasta will soften and the excess liquid will have been absorbed. Garnish the palermo pasta with torn thyme.
