Paella is the national dish of Spain. There are hundreds of variations, transformations and therefore flavours, but the base is the same … that is rice fried in a large pan along with other ingredients.

Procedure:
1. In a large pot or deep frying pan, fry half of the bacon cut into cubes in hot oil, add the chicken cut into pieces, cover with a little water and simmer until tender
2. Remove the meat, put the veal and pork cut into small cubes in a casserole, pour a little water, simmer also until soft and remove
3. Stir in the parboiled, steamed rice, pour in the broth, add salt, pepper, steamed, peeled and cut into small pieces tomato, lemon juice, fish meat cut into pieces and fried in oil and together with the prepared meat simmer in the oven until tender
5. Five minutes before finishing, add the drained peas and crab meat.
