Ox Eye with Potatoes
A great quick lunch or a quick hot dinner.
Ingredients:
Procedure:
1. Boil the cleaned, peeled potatoes in lightly salted water until tender, then drain them and let them drain thoroughly
2. Fry the onion in a pan with the cubes of English bacon
3. In another pan, crack 2-3 eggs into a tablespoon of melted lard, being careful to keep the yolks whole, add a little salt, sprinkle with red pepper, pepper and thyme, let the whites set, the yolks should remain slightly runny (if you don’t like runny yolks, cover the pan and let the yolks set as well)
4. Carefully transfer the ox eye to a plate, add the cooked potatoes to it, and garnish with fried onions and bacon.
Recommendation:
Instead of boiled potatoes, you can also serve mashed potatoes, which are also garnished with bacon and onions.
