I got this recipe for gingerbread cookies from my mom. We bake them every Christmas; sometimes as early as St. Nicholas Day. We love the smell and taste of them, they make the whole apartment smell good and importantly; they stay soft and soft for a long,long time. We decorate them with nuts, almonds or sugar icing. Other Christmases we even decorated our Christmas tree with them. Without these gingerbread men, we wouldn’t even have a Christmas. 🙂

In a saucepan over medium heat, melt the water, Smetol,sugar and honey. Stir gently, the mixture must not boil.

When everything is nicely melted and combined, let the mixture cool. To the cooled mixture add the progressive flour,eggs, baking soda, gingerbread spices. Knead to form a dough. Since it contains honey, it will stick a bit.

Let the dough rest for at least 2 to 3 hours, but preferably overnight. The next day, you can roll the dough piece by piece and cut out with the molds of your choice. Decorate with nuts and brush with beaten egg. Simply preheat the oven to 180° C. Bake for 10 – 15 minutes depending on the type of oven. It is necessary to trace the first baking sheet, the dough is tender, it is not necessary to bake it for a long time. Finally, decorate with sugar icing,or bought Dr.Oetker.
