Fantastic omelette for Sunday breakfast.
1. Melt the butter in a pan with the olive oil. 2. Add sliced fresh mushrooms. Sauté for 5 minutes, stirring occasionally. Or until they get a nice brown crust. 3. Season with salt and pepper to taste. 4. Add diced bacon. And mix together. 5. In a bowl, whisk together the eggs and cream and pour over the sautéed mushrooms. 6. Do not stir. 7. Add the finely chopped spring onions. 8. And just wait until the eggs are done (we can speed up the process if we use a lid on the pot). 9. Serve immediately.
