Broken Eggs (Nishiki tamago)

This egg dish is served as a dessert or dessert with tea in Japan.
Ingredients:
Procedure:
1. Hard boil the eggs for 12 to 13 minutes, divide them into yolks and whites and beat each separately
2. Beat the whites with 6 teaspoons of sugar and 1/
8 teaspoons of salt, the yolks with 9 teaspoons of sugar
3. Prepare a tin foil mould, preferably square, into which you first put the egg white mixture, knead and spread the yolk mixture on top
4. Place the mould in a steamer and leave to steam for 8 to 10 minutes, cut into squares when cool.
Recommendation:
Instead of a steamer, you can use a baking tray and bake the eggs for 10 minutes in a moderately heated oven.
