Ingredients:
4 cups organic diced tomatoes
2 organic jalapeños, seeded and diced
1 organic onion, diced
4 cloves organic garlic, minced
4 cups vegetable broth
1 tablespoon honey
1 tablespoon balsamic vinegar
1 teaspoon smoked paprika
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon sea salt
1/4 teaspoon black pepper
Instructions:
Place the tomatoes, jalapeños, onion, garlic, and vegetable broth in a large pot over medium heat. Bring to a simmer and cook for 10 minutes.
Add the honey, balsamic vinegar, smoked paprika, chili powder, cumin, salt, and pepper. Cook for another 5 minutes.
Use an immersion blender to blend the soup until it reaches your desired consistency. I like mine nice and smooth, but you can leave some chunks if you prefer.
Serve with bread on the side for dipping.
