Orange and nougat muffins, a delicious recipe for making the best use of the ingredients.

In this case it has been a bit of soft almond nougat, which in our house is not that it was left over for not liking, but rather by the exaggerated amount that we had put. So before throwing anything away, we prepared some scandalous nougat muffins that will be good for breakfast for the next few days, because they are perfect stored in a tupper.
Ingredients
Eggs, 3 Sugar, 200 g Orange zest, 1 Sunflower oil, 25 g Whipping cream, 175 g Pastry flour, 250 g Chemical baking powder, 1 sachet Soft nougat, 100 g
Step 1
In a large bowl, mix the sugar with the orange zest with a fork so that it absorbs all its aromas. Add the eggs and beat with an electric or manual whisk, but very vigorously, for about 3-5 minutes until the mixture changes from yellow to whitish, and the texture from liquid to creamy.
Step 2
Next add the oil and cream and continue beating for another minute.
Incorporate the flour and yeast through a sieve and mix with a spatula until it is all perfectly incorporated.

Finally chop the nougat and mix with the rest of the dough.

We will leave it in the fridge for a little while, about 15 minutes, while the oven heats up, so that the dough rises well and we get beautiful cupcakes with a top.
At this point we turn on the oven and heat it to 220ºC.
After the resting time of the dough, we will place the cupcake molds in our tray and with the help of an ice cream spoon, perfect for this purpose, we fill the molds a few ¾ parts, and optionally sprinkle them with sugar or as in this case with pearl sugar and some slivered almonds.
Bake them for 10 minutes at 220ºC and the last 5 minutes lower the temperature to 200ºC. We check that they are ready by pricking with a toothpick and if it comes out clean is that they are already, if it comes out with traces of dough, we leave them five minutes more and repeat the check.

When our muffins are ready, remove them from the oven and let them cool on a wire rack.
