Onion Bhaji with Mint

This appetizer from India is served hot or warm.

Ingredients:

Rule for approx. 12 people: 125 g of grain flour 0.65 dl cold water 1 pc large onion 4 tbsp strained low-fat yogurt 1 tbsp chopped fresh mint 1/4 tsp minced cilantro 1/4 teaspoon of cayenne pepper 1/4 tsp ground cumin ground black pepper salt vegetable oil and frying mint sprigs for garnish

Procedure:

1. Add the coriander, cumin, cayenne pepper and mint to the bowl with the chickpea flour
2. Stir in the yoghurt, water and the cleaned, finely chopped onion
3. Fill the high-sided pan one-third full with oil, heat it up
4. Drop heaping tablespoons of the mixture into the hot oil, a few at a time, and with two forks form balls directly in the oil
5. Fry the individual balls, turning frequently, until golden brown
6. After removing the bhajis from the oil, place them on paper napkins and keep them warm until the rest is done
7. Serve the finished bhajis hot or warm garnished with sprigs of mint.

Note:

Chickpea flour: a gluten-free flour made from chickpeas, a legume similar to hazelnuts. It is available as an instant product.
