Omelette with sweet potato and beans

ingredients

1 tbsp olive oil 1/2 pk medium sweet potato 1 handful green bean pods to taste salt, ground black pepper, smoked paprika 3 pk egg grated parmesan

Protein morning for a better day full of energy.

Heat the oil in a pan, add the sweet potato cut into small pieces and fry until the potato is soft, about 5 minutes.

Then add the frozen beans, salt, pepper and smoked paprika to taste.

Bake everything together briefly, and then add the beaten eggs.

When they have coated from the heat, add the parmesan cheese and move the pan to the oven just below the grill and cook until the top is a lovely golden brown.

Serve with buttered toast.
