Omelette with spinach, feta and potatoes

Baked potato slices with spinach, topped with feta, topped with eggs and baked in the oven under the grill.

Ingredients:

140 g frozen spinach 100 g feta cheese 2 tbsp olive oil 8 pcs eggplant 6 pcs boiled new potatoes 1 pcs garlic cloves ground pepper salt

Procedure:

1. Break eggs into a bowl, add salt and pepper and whisk
2. In a frying pan in heated olive oil, fry the sliced potatoes until golden brown, add the thawed, squeezed spinach, peeled finely chopped garlic clove and heat everything through
3. Then sprinkle with crumbled feta, pour over the eggs and heat for about 15 minutes, then put the pan in the oven under a hot grill and bake until golden brown.
