Omelette with organic eggs

Carelia’s master chef Marko Loman explains in a video how to make a delicious omelette.
Ingredients for 1 person
3 organic eggs 15 g freshly grated parmesan cheese parsley chives chives tarragon sea salt black pepper butter good quality butter and salt.good quality olive oil for the finishing touch
Making the egg mass:
Break the eggs into a bowl and whisk the texture until the whites and yolks are well mixed.
Add the grated Parmesan cheese to the egg mixture. Season with sea salt and freshly ground black pepper.
Chop the herbs finely with a knife and add to the egg mixture. Check the taste.
Frying the eggs:
Heat a frying pan to medium-high.Add a knob of butter to the pan and let it melt.
Add the egg mixture to the pan and stir slowly with an arrow.
Keep the pan in constant motion and watch the egg mixture coagulate.When the egg mass has partially coagulated, set the pan aside for about 10 to 15 seconds and allow the bottom of the omelette to coagulate slightly.
After this time, cook the omelette in half circles until it is double in size.and add a knob of butter to the empty side of the pan and brown lightly. Tilt the pan so that the butter drips under the omelette and gives it a lightly browned surface.
Toss the omelette with a quick flick of the wrist on a plate and finish with olive oil.
A successful omelette has a lightly browned surface and is fluffy and slightly runny inside. The omelette should be served immediately, as it will continue to ripen even after it has been turned over.
