Omelette with mushrooms II.
Egg omelettes served filled with a mixture of mushrooms, sausage and other ingredients.

Procedure:
1. Slice the cleaned mushrooms and sausage, the cleaned onions into rounds and the peeled garlic cloves into fine slices
2. In a frying pan in heated oil fry the mushrooms, then add the sausage, onions and when it starts to turn golden, add the garlic, puree and thyme leaves, then mix everything, add a little broth and simmer
3. When the eggs begin to set, turn the omelette over and fry until golden on the other side
4. Carefully slide the omelette onto a plate, fill with the hot filling, fold in half, then in quarters and serve immediately.
