Make egg omelettes by breaking whole eggs, beating them with a little salt and milk or cream, and pouring the mixture thus prepared over the melted lard in the pan. Bake slowly, stirring constantly, and only after it has thickened let it toast like pancakes.

Fill the omelette with the spinach puree and serve with boiled potatoes.
