Olive Polenta with Tomatoes

Polenta prepared in a pan, grilled together with cherry tomatoes, olives, feta cheese and parmesan cheese.

Ingredients:

325 ml of chicken stock 125 g cherry tomatoes with stem 100 g diced feta 85 g of instant polenta 40 g finely grated parmesan 20 g butter 2 tbsp black olives 1 handful of arugula pepper salt

Procedure:

1. In a metal-handled pan of at least 500 ml, bring the chicken broth to a boil with butter, seasoned with salt and pepper
2. Gradually stir in the instant polenta and cook, stirring constantly, for 1 minute, then remove the pan from the heat
3. Top with parmesan cheese, spread feta cubes, cherry tomatoes and olives, place the pan under the grill in the oven for 10-12 minutes
4. Serve garnished with fresh rocket.

Note:

Polenta – This is a very healthy and fortifying porridge that can be eaten as a stand-alone dish or form the basis for many other dishes. It originates from Italy.
