Mixed cooked onions with potatoes, mushrooms and cream, garnished with triangular cheese or red onions with parsley.

Procedure:
Peel the onions, slice them, put them in hot oil and let them brown.
Dust with plain flour, sauté for a few minutes, pour cold water, whisk well, simmer for 20 minutes, then blend and strain through a fine colander.
Roast the peeled potatoes cut into cubes and sliced peeled mushrooms in a little heated oil, add to the soup and cook until tender.
Salt and pepper the soup, add cream to soften and garnish with a circle of red onion and finely chopped parsley or a triangle of cheese.
Recommendation:
Cubed bread or bread rolls toasted in butter are suitable for onion soup.
