This cookie is one poem. It’s really easy to make and you can use a regular spoon as a measuring cup. It tastes really good and is ready in one-two!

1.

First, soak the raisins in the rum to soften them and the flavours will combine.

2.

Filling: Clean and grate the apples. Stir in the cinnamon sugar. If the apples are more acidic, add vanillin sugar. Place the grated apples in a saucepan, heat and add the raisins. Stir and simmer briefly.

3.

Cesto: Beat the whole eggs with the granulated sugar until frothy. Add the oil and milk. Mix. Progressively add more plain flour and baking powder.

4.

Grease a smaller (20×30) baking tin with butter and dust with flour. Divide the dough into two parts and pour one part on the baking sheet. Place in the oven at 180 degrees

5.

When the baking is about halfway through, about 12 minutes, remove the baking sheet and layer the stewed apples. Smooth over to make sure there are no holes anywhere so the batter doesn’t overflow. Pour the other half of the batter on top and bake for 12-15 minutes more. Watch the baking to make sure the cake doesn’t burn.

6.

Let the baked cake cool, sprinkle with icing sugar and serve. Enjoy!
