New Year’s lentil soup

If you believe in superstition, then you surely know that we shouldn’t eat poultry on New Year’s Day lest our luck run out. We should cook a big pot of lentils. The more lentils on your plate, the more money in your wallet.

The basis of good lentils is smoked meat broth. That’s why we have to cook it first. Put water in a pot to boil, add a few bay leaves, allspice and black whole pepper. When the water boils, put the smoked meat in and cook until soft. The smoked meat can be cooked in a pressure cooker, which will shorten the cooking time considerably. Remove the cooked meat, wrap it in foil and leave it to cool. Set the broth aside.

If we use dried mushrooms we must cover them with boiling water and let them stand for at least half an hour, then drain them, rinse them and they can be used for cooking. Chop the bacon finely and put it on the lard to render. Add the washed lentils and pour over the smoked meat stock. Add the whole smaller onion with the skin, 2-3 bay leaves, put the whole pepper in a teapot, take it out after cooking and throw away the pepper.

Slice the peanuts, some of them quite finely and some of them into larger pieces. The small ones will boil and thicken the soup. Add the garlic, drained mushrooms and let it cook. Do not add salt, as the smoked broth is salty enough.

When the lentils are cooked add sour cream, but you can also add sweet or cooking cream. To keep the cream from curdling, pour it into a bowl and ladle in the hot soup, stirring constantly. This way the cream gets the temperature of the soup and when you pour it into the pot it won’t curdle anymore. Let the soup boil and season with salt, pepper, vinegar or lemon juice if necessary.

Serve with diced smoked and garnish with parsley. Enjoy and may our luck not run out in the New Year and our money be as good as the lentils on our plate 🙂
