Juanjo López from La Tasquita de Enfrente is one of the best chefs in Spain and he proposes a lamb recipe that he has prepared together with Interovic so that this New Year’s Eve we can enjoy a unique dish as if we were in his restaurant.

Ingredients

For the lamb

. Boneless leg of lamb, 1 Flour, 100 g Sweet onions, 2 cloves of garlic, 6 Fried tomato, 6 tablespoons Bay leaf, 2 leaves White wine, 1 glass Apple vinegar, 1 dash Sweet paprika, 1 teaspoon Chopped kalamata olives, 200 g Capers, 100 g Chopped raw almonds without skin, 50 g Carrot, 1 leek, 1 Salt, pepper and EVOO

For the parsnip parmentier

Medium potatoes, 3 Parsnips, 1 Milk, 150 ml Unsalted butter, 50 gr Lamb broth, 400 ml Salt and pepper

Step 1

We roast the bones 30 minutes at 180 ºC and 30 minutes turning them over. Put them in a saucepan with the carrot, leek, two cloves of garlic, thyme and a bay leaf. Cover with water and simmer for 1 hour and 30 minutes.

Step 2

In another pot, brown the floured and seasoned pieces of lamb with EVOO. Remove and set aside. In the same oil add the julienned onion, the rest of the finely chopped garlic and the chopped olives. Cook over very low heat for 1 hour.

Step 3

Cook the potatoes and parsnips in water for 45 minutes. Strain and mix with the butter, milk and 400 ml of the reserved lamb stock. Blend with a blender until you have a puree. Add salt and pepper to taste and set aside.

Step 4

When the onion has caramelized add the lamb, fried tomato, paprika, a bay leaf and leave it for 4 minutes. Add white wine and vinegar until the alcohol evaporates. Cover with the rest of the remaining stock.

Step 5

Raise the heat to a boil and lower to medium heat. Let it cook for an hour until it reduces and thickens the sauce.

Step 6

When the meat is ready, it is ready when it falls apart with a fork. Add the capers and almonds. Let it cook for 5 more minutes over high heat and correct the salt.
