Mutton stew with Vegetable Recipes and potatoes | – cook book, recipes and inspiration

With the Born in the EU project and in cooperation with chef Petr Cvan, we will taste traditional dishes from different parts of Europe. This recipe takes us to an island, this time in the northwest of Europe – Ireland.

Ingredients:

Rule for 4 servings: 800 g of mutton (pork can also be used) 500 g small potatoes 2 pcs garlic cloves 2 pcs carrots 1 pcs onion 1 handful of dried thyme 1 sprig of thyme 1 teaspoon of marjoram 0.5 l stock (ideally meat) 0.5 lblack beer a knob of butter pepper salt

Procedure:

Cube the meat and in a large saucepan, brown it in oil until golden brown, season with salt and pepper, add the crushed garlic and thyme and simmer until the juices evaporate

.Pour in the beer, simmer for about 5 minutes, add the stock and simmer for about 1.5 hours

Cut the potatoes and onions into quarters and the carrots into rounds , melt the butter and sauté the Vegetable Recipes for about 15 minutes

Add the Vegetable Recipes to the meat, pour in the rest of the stock and simmer for 10 minutes. Stir in the chopped parsley, mix and serve garnished with marjoram.
