Sheep meat cubes stewed on onion base in tomato puree and wine.
Ingredients:
Procedure:
1. Cut the meat into cubes, put on a finely chopped onion, fried in oil
2. Fry, add crushed garlic and pour wine
3. Bring the contents of the pot to a boil, add tomato paste, salt, spices and simmer under a lid on a small flame
4. After a while, dust the meat with plain flour, let it steam, then mix it with the sauce, pour a little water and finish cooking
5. Towards the end of the stewing process, add the olives
6. Serve the ragu on plates wiped with garlic.
