Mutton on tomatoes

Roasted mutton chops stewed together with bulgur and other ingredients. Recipe from Tunisia.

Procedure:
1. Peel and finely chop the onion and garlic
2. Clean the mutton chops and lightly chop them
3. Add crushed sterilized tomatoes, puree, chickpeas and mix lightly, pour hot water and simmer until semi-soft
6. Finally add bulgur, finely chopped coriander and mint
7. Season the dish with salt and pepper and simmer for another 20 minutes.
Note:
Bulgur: a form of whole wheat that is pre-cooked and then poured over.Chickpeas: a legume somewhat similar to peas, with a mild nutty flavor.
