Mutton broth

ingredients

500 g mutton 150 g onion 50 g plain flour 50 g butter 5 cl vinegar to taste saffron to taste salt

procedure

1. Wash the mutton in cold water, cut into smaller pieces, put in a saucepan and put on the fire. During cooking, collect the foam that forms on the surface. Remove the cooked mutton from the pot and strain the stock. 2. Fry the finely chopped onion in butter, dust with flour and fry. 3. Then put the cooked mutton, the fried onion, saffron, salt and bring everything to the boil. 4. Add the vinegar, pour it into the soup, bring it to the boil again, then set the pot aside.
