Mushrooms in oil brine

ingredients

250 ml wine vinegar 120 ml water 1 clove garlic 1 KL salt 500 g fresh mushrooms 1 pk bay leaf a little olive oil 6 pk whole black peppercorns 4 sprigs thyme 4 pk chili pepper

procedure

1. Pour wine vinegar, water into a pot, add peeled garlic, salt, whole black pepper, bay leaves, thyme and cook the brine over medium heat for about 10 minutes. 2. Then add the cleaned mushrooms to the brine, cut them into smaller pieces if necessary. And cook this mixture for another 10 minutes. Drain the mushrooms and fill the glass jars with them. Add one whole chilli pepper to each jar. 3. Heat the olive oil to about 80°C and pour it over the mushrooms in the jars so that they are completely submerged. Close the jars tightly and set aside in a cool, dark place.
