Another recipe for an amazing mushroom pressure cooker from Mr. Marounk, which he has been making for almost 20 years. It is a tlačenka prepared from pickled mushrooms, pork legs, pork knee and other ingredients.
Ingredients:
4 small jars
of pickled mushrooms in a sweet and sour brine (about 0.3 l) – the more varieties the better
4 pcs
of pig’s feet
1 pcs
of pork knuckle
2-4 pcs
garlic strips
garlic strips for stuffing the pork or substitute
salted water for simmering meat
bean leaves
new spices
majorana
pepper
salt
Procedure:
Cook a 4-legged knee in salted water with bay leaf and allspice
Pour the mixture with the broth from the knees and legs, appropriately, simmer everything for 30 minutes, season like a classic tlačenka, i.e. with garlic, marjoram, pepper and salt
Fill the intestines, pierce them with a needle to escape the air, while solidifying, occasionally roll, so that the meat and mushrooms do not remain only on the bottom of the tlačenky.
