Mushroom stuffed turkey roll recipe

Maybe not in Spain, but certainly in the United States, few dishes represent Christmas and family gatherings more than the stuffed turkey. Those iconic Hollywood movie images we all have of a family in matching sweaters and carving a huge Christmas turkey.
Here we don’t usually have a single traditional dish because in a country as diverse and deeply gastronomic as ours; there are of all sizes, colors and flavors for all kinds of tastes. It is not very common to eat stuffed turkey, but it is very common to eat chicken and the mechanics are the same.
However, since this recipe is very filling (of course it can be used in other preparations) and this year, unfortunately, we are not going to be able to gather so many; we propose a stuffed turkey roll. It is nothing more than a turkey fillets superimposed, stuffed and flanged that can be prepared in less than 20 minutes.
A very tasty, juicy and rich recipe that can be made in the format that everyone wants and stuffed with the farce that you like. I always say that farces are the best way to take advantage of leftover food from other times, because if we season them with other ingredients, they are really good dishes.
Maybe this is sounding very strange to you, but we have always seen stuffed meat rolls: ham and cheese, spinach and feta cheese or bacon and cheese. They are very easy to make and, on this occasion, if you accompany them with a red fruit sauce, they have that taste and aroma of a family Christmas party that we like so much and that we are so looking forward to. To enjoy and for this happy year to end.
How to make a very easy stuffed turkey roll
Ingredients
. Turkey fillets, 500 g Salt, c/s Ground black pepper, c/s Cooked ham type York, 2 large slices Goat cheese, 4 thin slices Butter, 60 g Leek, 1 pc Shallots, 2 pc Garlic cloves, 2 pc Mushrooms, 50 g Pitted green olives, 30 g
For the red fruit sauce
Leek, 1 pc Red berries (frozen), 100 g Honey, 1 tbsp Brandy, 70 ml Dried sage, 1 tbsp Salt and ground black pepper, q/s
Step 1
The first thing will be to prepare the farce that will go inside the turkey roll. To do this we finely chop the garlic, leek and shallots and sauté them with butter and salt over low heat until very tender.
Step 2
Meanwhile we chop the mushrooms, having made sure we have removed all the soil, and also the olives. We add them when the above is very tender and let them sauté for 5 minutes.
Step 3
Let evaporate completely and season. Mash to make it smooth but not too much, it has to be dense, not liquid. Season with salt and pepper and cool completely.
Step 4
Stretch the turkey fillets well, flatten them with the help of a spatula or the bottom of a casserole dish and overlap them to form a large layer. Cover this layer with the ham, add the farce and the crumbled cheese. Close forming a roll carefully, pressing well, and help us with some toothpicks to keep the shape.
Step 5
Prepare the red fruit sauce, also poaching the leek first with a little olive oil to make it tender. Add the berries and cook with the brandy and honey until a coulis is created. Add salt and pepper, add the sage and blend.
Step 6
Seal the turkey roll in the pan with a little olive oil on all sides and place in the oven at 180°C for 15 minutes until it is cooked inside, the cheese is melted and golden brown. We can bake it in the same pan if we are careful to use one that is suitable to put in the oven, so we make less mess. Serve with the sauce on top or on the side.
Tips and suggestions.
The stuffed turkey roll can be made ahead of time, even pan-fried before putting it in the oven for the last few minutes.
