Mushroom soup from South Bohemia

Ancient Bohemian mushroom dish. Similarly to kuba, a different houbovec is baked in South Bohemia, another in the Giant Mountains, another in the Orlické Mountains … but the basis is the same, sautéed mushrooms, buns soaked in milk …

Procedure:
1. 2. Cut the mushrooms into cubes and pour the milk over them, beat the egg yolks with the butter, add the moistened bun, the stewed mushrooms and the diced smoked meat
3. Whip the egg whites into snow, stir into the prepared mixture, add the grated garlic, season and mix thoroughly
4. Grease the baking dish with butter and sprinkle with breadcrumbs
5. Spread the mixture in the baking dish and bake in a moderately heated oven (170-180 °C) until a crust forms on the surface, which will take about 25-30 minutes
6. Cut the mushroom soup into cubes or wider slices and serve warm or even cold.
Recommendation:
Suitable side dishes are boiled potatoes and sauerkraut or vegetable chalamade.
