1 tbsp oil 1 tbsp butter 1 bunch spring onions 200 g fresh mushrooms a little salt a little ground black pepper 8 pcs egg 3 tbsp milk a little parsley for garnish
procedure

In a large frying pan, heat the oil and with the butter, fry the finely chopped onion and the parsley. Add the sliced mushrooms and sauté until all the water has evaporated. Season them lightly with salt and pepper.

Pour the mushrooms over the eggs beaten with milk. Sear the omelette on one side and when it is browned, place it under a heated grill and cook until golden brown. Sprinkle the finished omelette with parsley.
