Mushroom Dumplings
An old Czech classic from old mushroom cookbooks … dumplings prepared from sautéed mushrooms, toasted cubes of bun and other ingredients, served with cabbage, seasoned with fried onions.
Ingredients:
Procedure:
1. Cut the mushrooms into cubes, fry 2 chopped onions and parsley in lard, add the diced bun, fry until crispy and let cool
2. In 1/
4 l of milk, whisk 2 eggs and pour over the cooled fried cubes of bun and let stand for 15 minutes
3. In the meantime, cut bacon into cubes, let it cook and add the chopped mushrooms, simmer until soft and let it cool again
4. Mix the stewed mushrooms with the soaked toasted bun, add salt, pepper and thicken with breadcrumbs and bun, mix well
5. With wetted hands form small round dumplings, squeeze well so they do not boil and boil 10 in boiling salted water
6. Remove with a wire ladle and drain
7. Put the dumplings on a plate, serve them whole, or tear them in half with two forks and sprinkle them with fried onions, choose red or white sautéed cabbage as a side dish.
