Mushroom Cocktail

Sliced mushrooms cooked in slightly lemon acidified water, drained, mixed with mayonnaise, ham pieces, spices and whipped cream.

Ingredients:

200 g mushrooms 100 g pound ham 50 g mayonnaise 1 dl whipping cream 4 pcs small lettuce leaves ground pepper lemon water salt piece of caper or tomato for garnish

Procedure:

1. Slice the cleaned mushrooms, place them in a small amount of boiling water slightly acidified with lemon juice and simmer them until tender, then remove the pot from the heat source and let the mushrooms and water cool
2. Take out the mushrooms and let them drain thoroughly
3. Cut the ham into thin fries, add the mushrooms, mayonnaise diluted with lemon juice and mixed with pepper and salt, as well as most of the whipped cream, mix everything lightly
4. Place the cocktail in larger stemmed glasses lined with lettuce leaves and chill briefly in the refrigerator
5. Before serving, garnish individual servings with whipped cream, tomato slices or caper strips and lemon slices or wedges, serve on dessert plates with small spoons.
