Mushroom and onion omelette with tomatoes

1. Soak the dried mushrooms in warm water for at least 15 min. 2. Slice the onion into strips and sauté it in a tablespoon of olive oil. Then add the soaked mushrooms to the onions and fry for 5 more minutes. 3. Cut the tomatoes into cubes and add them to the sautéed mushrooms. Season the mixture with salt, pepper and other spices. Simmer together for about 10 minutes until the tomatoes are fully cooked. Finally, add the sliced black olives. 4. Beat the eggs in a separate bowl and then pour them over the mixture in the pan. Cover the pan and bake for about 10 minutes over a low heat. Then cut the omelette into 4 parts and serve. Enjoy!
