Mushroom and Cucumber Pancakes with Niva

Grilled savoury fritters with grated mushrooms, pilaf and young zucchini, seasoned with marjoram, garlic and chopped parsley.

Ingredients:

6 pcs of medium sized mushrooms 3 pcs of pressed garlic 3 pcs eggplant 1 pc young zucchini 6 tablespoons of whole wheat flour 6 tablespoons breadcrumbs 2 tbsp chopped parsley 1 dl milk 100 g niva mayo pepper salt

Procedure:

1. Grate the zucchini and mushrooms roughly
2. Mix with the other ingredients until a thick batter is formed., If necessary, thicken with breadcrumbs or dilute with milk. Taste the dough and add salt if necessary
4. Place higher patties on a flat grill surface with a spoon, turn them over after 8 minutes and grill from the other side
5. Serve with vegetable salad, bread or potatoes and tartar sauce.

Recommendation:

If you want, add 100 g of grated sausage to the batter.
